Here's a lovely soup adapted from Barnard and Kramer's _How It All Vegan_. We had it yesterday - absolutely delicious. We made this in this size, thinking it would be good for the two of us, but we have enough left for another day.

3 cloves garlic, minced
1 Tbsp fresh ginger, finely minced
1/2 medium butternut squash, peeled & cubed
1/2 cup water
14-ounces canned tomatoes
salt and pepper to taste
1/2 cup soy milk
2 green onions, finely chopped for Garnish

‘Saute’ the garlic and ginger in a little water on medium heat until the garlic is softened. Add the wuash, tomatoes, water, pepper and salt (if using) and simmer for 20 minutes or until the squash is cooked through.
Blend half the vegetables with the milk in a blender, return to the soup and simmer another 5 minutes.
Garnish and serve.

That looks so warming and simplistic, wonderful.

The soup looks gorgeous! Butternut is one of my favorite winter vegetables. I hope your beagle gets better. I also have a beagle, but she is only a puppy.

I was never a squash fan, but over the past few years, I find my tastes changing a bit and I'm liking foods that I never did like before. The ginger sounds like a nice addition, along with tomatoes. Hmmm, I may give this a try.
Glad to hear your pup is feeling better. We've had a few scary things happen with Simon, and thankfully he pulled through and is just fine. I'm sure Made' will be too.

I have not had butternut soup in so long. This sounds and looks great. Butternut squash has been added to the grocery list. Thanks

Now what IS there about butternut squash that so many people like it - it is probably my favourite of the winter squashes. (Well, my dh says it's because it's the easiest one to peel LOL)

I am looking for more recipes using it -

And thanks for the kind words about my little beagle, everyone. She is very precious to us.
